
POTATO SOUP

INGREDIENTS
- 200 ml of Ensure® Plus neutral flavour
- 4-5 medium potatoes
- 1 small onion
- 1 small stick of celery
- 25 g of butter
- Vegetable stock (400 ml)
- Seasoning
- 2 tablespoon of chopped parsley

METHOD
- Wash, peel and thinly slice potatoes.
- Peel and slice onion, wash and chop celery.
- In a large saucepan, melt butter and sauté vegetables for 10 minutes.
- Add stock and seasoning to the saucepan and simmer for 45 minutes.
- Remove vegetable mixture from heat, add to blender and liquidise.
- When liquidised, return to saucepan. Add Ensure® Plus and parsley, heat gently (do not boil) for 5 minutes and serve.
