Enjoy this warm winter favourite, where ripe tomatoes are blended with fresh vegetables, ham, and your Ensure nutritional supplements to provide a comforting and satisfying bowl of goodness.

INGREDIENTS

  • 1 bottle of Ensure Plus neutral flavour*
  • 450g tomatoes
  • 1 stick celery
  • 1 medium onion
  • 1/2 carrot
  • 30g cooked ham
  • 30g margarine
  • 375ml stock
  • Pinch of salt and pepper
  • 1/2 tsp sugar
  • 30g cornflour

METHOD

Prep time: Approximately 10 minutes 
Cooking time: Approximately 30 minutes

  1. Wash and slice the tomatoes and celery. Peel and chop the onion and carrot.
  2. Dice the ham into chunks.
  3. In a large saucepan, melt margarine and sauté the vegetables for 15 minutes.
  4. Add stock, ham, salt, pepper, and sugar. Cook until the vegetables are soft.

  5. Remove mixture from the heat and add to blender.
  6. When liquidised, return mixture to saucepan.
  7. Add cornflour to a cup and mix with a small amount of cold water to form a paste. Add to saucepan.
  8. Add Ensure Plus and simmer for 5 minutes. Do not boil.
